Happy Monday everyone! And what a happy Monday it is, because who doesn’t like pie. What better way to start off the week than with National Cherry Pie Day. Here are some facts you may not have known about this pie that doesn’t get nearly as much recognition.

  1. The word ‘cherry’ comes from the Turkish town of Cerasus.
  2. Cherries belong to the rose family.
  3. Canada holds the record for baking the biggest cherry pie in the world. A pie weighing 39,683 pounds was baked in Oliver, British Columbia which broke the record that was earlier held by Traverse City         mitrapie01_0957
  4. Once upon a time, serving ice cream on cherry pie in Kansas was prohibited.
  5. Cherry pie is the fifth popular pie in the US – beaten only by Apple, Pumpkin, Pecan and Banana Cream.

 

Of course I couldn’t leave you without a recipe, so here is a tried and true recipe for cherry pie. Enjoy!

Cherry Pie

Ingredients

  • 4 cups fresh or frozen tart cherries
  • 1 to 1 1/2 cups granulated sugar
  • 4 tablespoons cornstarch
  • 1/8 tablespoon almond extract (optional)
  • Your favorite pie crust or pie dough recipe for 2 crust pie
  • 1 1/2 tablespoons butter, to dot
  • 1 tablespoon granulated sugar, to sprinkle

Directions

Place cherries in medium saucepan and place over heat. Cover. After the cherries lose considerable juice, which may take a few minutes, remove from heat. In a small bowl, mix the sugar and cornstarch together. Pour this mixture into the hot cherries and mix well. Add the almond extract, if desired, and mix. Return the mixture to the stove and cook over low heat until thickened, stirring frequently. Remove from the heat and let cool. If the filling is too thick, add a little water, too thin, add a little more cornstarch.

Preheat the oven to 375 degrees F.

Use your favorite pie dough recipe. Prepare your crust. Divide in half. Roll out each piece large enough to fit into an 8 to 9-inch pan. Pour cooled cherry mixture into the crust. Dot with butter. Moisten edge of bottom crust. Place top crust on and flute the edge of the pie. Make a slit in the middle of the crust for steam to escape. Sprinkle with sugar.

Bake for about 50 minutes. Remove from the oven and place on a rack to cool.

Happy Friday! There’s something about this particular Friday that has me in high spirits today. I cannot wait to get out of work to go home and relax and begin my weekend. I don’t necessarily have the drive and motivation to cook dinner on Friday’s but when I do, I always opt for something light because I know I’m going to make some not so good decisions during the weekend. So here is a quick, easy, and light salad recipe you can make for dinner tonight that will be sure to set the mood for the upcoming weekend.

Honey Mustard Chicken, Bacon, and Avocado Salad

INGREDIENTS

Servings: 4

Dressing/Marinade
2 tablespoons olive oil
⅓ cup honey
3 tablespoons stone ground mustard
2 tablespoons Dijon mustard
½ lemon
1 teaspoon minced garlic
½ teaspoon salt
½ teaspoon pepper
4 skinless and boneless chicken thighs

Salad
1 head romaine lettuce, chopped
1 cup cherry tomatoes, halved
¼ red onion, thinly sliced
1 avocado, diced
1 hard-boiled egg, sliced
¼ cup cooked bacon, diced

PREPARATION

1. In a small bowl, add the olive oil, honey, stone ground mustard, Dijon mustard, 2. Lemon, garlic, salt, and pepper. Whisk until smooth.
3. Remove ½ of the marinade and refrigerate to use as a dressing.
4. Add chicken thighs to remaining marinade and let it marinate for two hours.
5. Add a teaspoon of olive oil to a nonstick pan. Sear chicken on each side until 6. Golden, crispy, and cooked through. Set aside and allow to rest.
7. Put lettuce in a large bowl, add tomatoes, red onions, avocado slices, and hard-boiled egg.
8. Slice chicken into strips and place in the salad.
9. Add the remaining marinade to the salad and toss.
10. Sprinkle bacon on top.
11. Enjoy!

BRRRR… Happy Friday everyone. If you’re in Austin, TX today then you’re probably freezing your butt off like I am. I can’t wait to go home after this long work day and snuggle up by the fire. The only thing that would make that better is if I had some hot dinner to go along with it. Here are 3 slow cooker recipes sure to warm the soul and your hands this cold and chilly weekend.

Slow Cooker Pot Roast

INGREDIENTS
3 pounds chuck roast
Salt, to taste
Pepper, to taste
1 ounce dried onion soup mix
1 onion, diced
3 gold potatoes, diced
3 large carrots, chopped
½ cup water

PREPARATION
1. Place the chuck roast in a 7-quart slow cooker.
2. Sprinkle on salt, pepper, and onion soup pack. Top with vegetables and water.
3. Cook on low for 8 hours, or high for 4-5 hours.
4. Enjoy!

Slow Cooker Chicken & Biscuits

INGREDIENTS
3 chicken breasts, diced
Salt, to taste
Pepper, to taste
2 cups broccoli florets
2 cups baby carrots, diced
21.5 ounces condensed cream of chicken soup
1 can refrigerated biscuits

PREPARATION
1. Place the chicken in a 7-quart slow cooker. Sprinkle on salt and pepper.
2. Add the veggies and condensed soup and mix thoroughly.
3. Cook on high for 3 hours.
4. Rip biscuit dough into small pieces and drop evenly over chicken. Cook an additional hour.
5. Enjoy!

Slow Cooker Cornbread Chili

INGREDIENTS
2 pounds pork shoulder, diced
1 tablespoon seasoned salt
1 tablespoon cumin
1 can kidney beans, drained
½ cup tomato, diced
½ onion, diced
½ cup red enchilada sauce
1 box cornbread mix, prepared according to instructions
Cheddar cheese to top, optional

PREPARATION
1. Place the pork shoulder, seasoned salt, cumin, kidney beans, tomato, onion, and enchilada sauce in a 7-quart slow cooker. Mix thoroughly.
2. Cook on high for 3 hours.
3. Dollop prepared cornbread evenly over mixture. Cook an additional hour.
4. Top with cheddar cheese if desired.
5. Enjoy!

Go start that crock pot and crank up the fire. It’s going to be a warm and cozy weekend with these recipes in your hand.

Happy Friday! We are one week closer to my favorite holiday of the year. I know you may have read the title and gasped. But you read it right, I for one am not afraid to admit I find turkey kind of laame. This is undoubtedly my favorite holiday probably because french fries are by far my favorite food. The potato really like you can’t go wrong and frying these bad boys up was genius. But ever wonder how french fries got their name? Well I’m here to tell you all about the history of the fry and also share with you a super simple recipe that’ll have you cooking up these salty creations every day!

How French Fries Get Its Name

During WWI the official language of the Belgium army was French so the American soldiers stationed there gave it a name of “French Fries”.

The french fries are so famous that they are the national snack of the Netherlands which is astonishing.

History of the French Fry Day:

The term “French Fried Potatoes” first occurs in print, in English, in the 1856 work Cookery for Maids of All Work by E. Warren. However, the  data is insufficient to show that from where the day originated the when?

How To Celebrate National French Fry Day:

  • Just go and buy the best fries and share them with there, friends, a day too.
  • Use #NationalFrenchFryDay hashtag on Social media to let people know that you are celebrating the Fries day.

Easy French Fry Recipe:

  • Slice 2 1/2 pounds russet peeled potatoes into French fries, and place them in the freezing cold, it won’t let them brown while you are preparing oil to fry.
  • Heat 1 cup vegetable oil in a large skillet over medium to high heat. While the oil is heating up, sift one cup all-purpose flour, 1 teaspoon of garlic salt, 1 teaspoon of onion salt, while 1 teaspoon (regular) salt, and 1 teaspoon of paprika into a large bowl. Slowly stir in enough water so that the mixture can be drizzled from a spoon.
  • First, dry the potato slices on the paper towel then put potato slices into the batter one at a time, and throw them into the oil. Make sure to place the fries one at a time in the skillet else they will clump together. Keep them fry until golden brown and crispy is obtained. Remove the fries to paper towels to remove excess oil they soaked up.

French Fry Dipping Sauce:

Combine one cup mayonnaise, 1 Tablespoon minced garlic, 2 tablespoons of lemon juice ½ teaspoon salt a pinch of black pepper together in a medium sized bowl. Stir all the ingredients till smooth. Keep the sauce in fridge for about 30 minutes before serving. Enjoy a quick made delicious sauce with your fries.
