Happy Halloweek! It’s the weekend before Halloween and we are going to celebrate this spooky holiday all week long; with food of course! So let’s begin with the best part to any meal. Some ghouly appetizers for you and your guests to enjoy.

Finger Hot Dogs

hot dog.png

INGREDIENTS
8 hot dogs
8 hot dog buns
ketchup

PREPARATION
In a skillet, cook hot dogs until golden brown.
With a knife, carefully make 3 slits in the middle of the hot dog, 3 towards the end of the hot dog, and cut the casing off of the tip of the hot dog to make it look like a finger.
Spread ketchup in the hot dog buns, and place the hot dogs.
Enjoy!

Pumpkin Deviled Eggs

eggs

INGREDIENTS
6 hard-boiled eggs
3 tablespoons dijon mustard
¼ cup mayonnaise
1 teaspoon paprika plus additional for garnish
Salt, to taste
Pepper, to taste
Chives for garnish, finely chopped

PREPARATION
Peel and slice hard boiled eggs lengthwise. Separate yolks into a separate bowl.
Add mustard, mayonnaise, paprika, salt, and pepper to the yolks, and mix thoroughly.
Fill a piping bag with the yolk mixture, and pipe into the empty egg whites.
Sprinkle with paprika, and place a piece of chive to make it look like a pumpkin.
Enjoy!

Buffalo Chicken Skillet Dip

chicken

INGREDIENTS
2 cups chicken, cooked and shredded
8 ounces cream cheese, softened
½ cup monterey jack cheese
⅔ cup cheddar cheese
½ cup buffalo sauce
½ cup ranch dressing
2 tubes refrigerated pizza dough
4 ounce block cheddar cheese, cubed
2 tablespoons melted butter

PREPARATION
Preheat oven to 400°F/200°C.
In a bowl, combine chicken, cream cheese, monterey jack, cheddar, buffalo sauce, and ranch.
On a lightly floured surface, roll out one can of pizza dough. Cut out triangles for eyes, and a mouth.
Bake for 12 minutes, or until the pieces are golden brown, slightly risen and cooked through.
Cut the remaining dough into 16 squares, place a cube of cheese on each one, and roll into balls. Place in a ring around the edges of a greased oven-safe skillet or dish.
Fill the middle of the dish with the dip filling. Bake for 35 minutes.
Place the dough face pieces on the dip.
Enjoy!

Layered Dip

dip

INGREDIENTS
1 16-ounce can refried beans
½ cup salsa
½ cup sour cream
1 cup guacamole

Garnish
Lettuce
Tomato
Black olives

PREPARATION
In a bowl, mix the beans and salsa. Spread onto a plate.
Spread guacamole over the beans.
Put the sour cream in a plastic bag. Cut off the end of one corner of the bag, and pipe out a bullseye pattern of sour cream over the guacamole.
Run a toothpick through the sour cream from the center outward, until it looks like a spiderweb.
Garnish with lettuce, chopped tomatoes, and black olives. Serve with tortilla chips.

Start off your night with these devilish appetizers and join me Wednesday to see what other spooky recipes I have up my sleeve.

Of course it being October and all, I had to include a fall staple as part of your superfood diet.

Pumpkin

halloweenisscaryweb

Sure, pumpkins can seem spooky in their Jack-o-lantern state, but don’t be fooled— they’re actually one of the most nutritious fruits out there. Loaded with antioxidants and disease-fighting vitamins, these gourds aren’t just for carving, making them a bonafide  superfood.

Pump Up the Pumpkin—Why They’re Super

Pumpkins’ bright orange color may make them a good substitute for traffic cones, but the real power behind their hue is beta-carotene, a provitamin that is converted to vitamin A in the body. Known for its immune-boosting powers, beta-carotene is essential for eye health and has also been linked to preventing coronary heart disease . But there’s no need to choose fresh to get the benefits of pumpkin. One cup of canned pumpkin has seven grams of fiber and three grams of protein— even more than the fresh stuff— and contains only 80 calories and one gram of fat. Plus, canned pumpkin is packed with vitamins and provides over 50 percent of the daily value of vitamin K, which may reduce the risk for some types of cancer . Still, the real treasure is in the seeds. One ounce (about 140 seeds) is packed with protein, magnesium, potassium, and zinc. Studies suggest pumpkin seeds provide a number of health benefits— such as blocking the enlargement of the prostate gland, lowering the risk of bladder stones, and helping to prevent depression . Plus, they contain high levels of phytosterols, which research suggests can reduce cholesterol and even help prevent some types of cancers . So get scooping!

We all give into cravings when we’re hungry and grab the first thing off the shelf. In order to not give into temptation, next time make some of these healthy snacks in big batches to keep on hand.

Spiced Popcorn 3 Ways

popcorn

Popcorn is a satisfying and nutritious snack that can be whipped up in a matter of minutes. For this recipe, you can either go with a curry paprika, garlic parm, or spicy oregano spice blend.

http://www.foodheavenmadeeasy.com/spiced-popcorn-3-ways/

Fresh Fruit Trail Mix

trail-mix

My go-to snack is a fresh fruit trail mix. You have to make it yourself with whatever mixed nuts you want, but replace the dried fruit with fresh grapes, blueberries, and/or cherries to make it lower in carbs and fresher. And I love the zing you get from the fresh fruit combined with the nuts.

Curry Granola Bars

granola

One of my favorite healthy snacks as of late is my homemade, no-bake, gluten-free savory curry granola bars! I’ve been really into savory bars lately as a way to mix it up from the usual sweeter options, and these bars come together really quickly and have a great texture and unexpected flavor.

http://www.fannetasticfood.com/2015/11/06/savory-curry-granola-bar-recipe-no-bake/

Chocolate Coconut Oat Bars

oat

These chocolate coconut oat balls are one of my favorite snacks. They are no-bake and easy to roll together using ingredients from the pantry. I love that they are portion controlled and easy to take with me on the go!

http://www.katheats.com/chocolate-coconut-oat-balls

BBQ-Flavored Roasted Chickpeas

chickpeas

Once I figured out how to make a spice blend that perfectly mimicked the flavor of BBQ chips — but is completely healthy — I knew these would be my favorite snack. They’re filled with fiber and protein to fill you up, and they’re so easy that even my takeout-loving friends can make them. I make a big batch on Monday and snack on ‘em throughout the week.

Now you don’t need to feel bad about snacking!

Treat yourself to some much-deserved time off—minus the souvenir of an extra five pounds on your frame!

Just because you’re on vacation, it doesn’t mean all your healthy eating and lifestyle habits have to take a vacay, too. There are always healthy and delicious options wherever you go, and there are a number of ways to make those choices more enticing. Here’s a breakdown of how to keep looking and feeling your best—because no one should feel like they need to detox after taking some much-deserved time off.

  1. Pack for the Plane

plane

Most airline meals and snack boxes are sky-high in calories and full of processed junk with a long list of artificial ingredients. Bring your own snacks from home or shop the airport for healthier choices.

2. Stay Hydrated

water

Dehydration symptoms include headaches, low-energy, and hunger, all of which can put a damper on your trip and tempt you to reach for unhealthy snacks. Avoid dehydration by always keeping a water bottle drink with you, especially when flying, sightseeing, or laying out.

3. Eat Foods High in Fiber

fiber

Vacationers tend to resort to packaged carbs for D.I.Y. fuel when what they really need is fiber. “For travelers, eating foods high in fiber offers a number of benefits from aiding digestion and preventing constipation to boosting energy and satisfying hunger.

4. Don’t Clean Your Plate

plate

On vacation, it’s likely you’ll eat most meals at a restaurant where the portions can be two to three times bigger than what you eat at home. Share entrees, order half a sandwich, or split one.

5. Eat a Nutrient-Rich Breakfast

breakfast

Whether you’re on vacation or at home, breakfast can set the tone for the whole day—so it’s important to eat a nutrient-rich and satiating meal that will keep you fueled all morning.Pack a bag of healthy breakfast starters such as a single-serve oatmeal and you’ll be well on your way to an easy and stress-free breakfast on-the-go.

Go out and enjoy your vacation and even indulge a little, but if you don’t want to come back with a week’s full of regrets, try out some of these tips!
