I know Spring is here and hot, summer days are quickly approaching but there’s still some time to get some use out of your trusty slow cooker before you store it away for the winter months. Here are some delicious recipes you can try before the heat wave strikes!

Honey Garlic Chicken

chicken

INGREDIENTS
8 chicken thighs
1 pound baby red potatoes
1 pound baby carrots
1 pound green beans
1/2 cup honey
1/2 cup reduced sodium soy sauce
4 cloves minced garlic
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes
1/2 teaspoon black pepper

PREPARATION
1. In a large bowl, mix honey, soy sauce, garlic, basil, oregano, red pepper flakes and pepper.
2. Place 4 chicken thighs in the bottom of a 6-qt slow cooker. Pour half of the soy mixture over the chicken. Throw in the baby red potatoes, carrots, then the other 4 chicken thighs. Season the top layer of chicken to taste, then pour the rest of the soy mixture over the chicken.
3. Cover and cook on low heat for 7-8 hours or high for 3-4 hours. Feel free to baste midway.
4. Add green beans during the last 30 minutes of cooking time.
5. Serve immediately and enjoy!

Optional: Broil the cooked chicken thighs, skin side up to brown and crisp the skins, about 3-4 minutes.

½ tablespoon salt

PREPARATION
In a small bowl, combine flour, salt, and pepper.
Rub the flour mixture on the beef, making sure it is covered entirely.

Transfer meat into slow cooker.
Add onion, celery, carrot, garlic, tomatoes, wine, herbs, bay leaf, and salt.
Cook on low for 8 hours.
Serve it with your favorite side dish and sprinkle some freshly chopped parsley.
Enjoy!

Happy Tuesday and Happy Birthday to anyone who shares the same birthday as me today! Like me, I hope you all are taking some much needed rest time. You deserve to celebrate YOU today. To help you do that, I’ve included one of my favorite cake recipes of all time. My mom used to make this cake all the time when I was growing up and it was always the first to go at any special event or function. You’ll see why once you make it!

Buttermilk Pound Cake

Buttermilk-Pound-Cake_exps3591_AC2930252B01_15_6b_RMS

Ingredients

  • 1 cup butter, softened
  • 2-1/2 cups sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1 cup buttermilk
  • Confectioners’ sugar, optional

Directions

  1. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour and baking soda; add alternately with buttermilk and beat well.
  2. Pour into a greased and floured 10-in. fluted tube pan. Bake at 325° for 70 minutes or until a toothpick inserted near the center comes out clean. Cool in pan for 15 minutes before removing to a wire rack to cool completely. Dust with confectioners’ sugar if desired. Yield: 16-20 servings.

Try not to eat it all at once!

Enjoy today! Your Realtor and Friend for Life~ Kathy
