Happy Friday! There’s something about this particular Friday that has me in high spirits today. I cannot wait to get out of work to go home and relax and begin my weekend. I don’t necessarily have the drive and motivation to cook dinner on Friday’s but when I do, I always opt for something light because I know I’m going to make some not so good decisions during the weekend. So here is a quick, easy, and light salad recipe you can make for dinner tonight that will be sure to set the mood for the upcoming weekend.

Honey Mustard Chicken, Bacon, and Avocado Salad

INGREDIENTS

Servings: 4

Dressing/Marinade
2 tablespoons olive oil
⅓ cup honey
3 tablespoons stone ground mustard
2 tablespoons Dijon mustard
½ lemon
1 teaspoon minced garlic
½ teaspoon salt
½ teaspoon pepper
4 skinless and boneless chicken thighs

Salad
1 head romaine lettuce, chopped
1 cup cherry tomatoes, halved
¼ red onion, thinly sliced
1 avocado, diced
1 hard-boiled egg, sliced
¼ cup cooked bacon, diced

PREPARATION

1. In a small bowl, add the olive oil, honey, stone ground mustard, Dijon mustard, 2. Lemon, garlic, salt, and pepper. Whisk until smooth.
3. Remove ½ of the marinade and refrigerate to use as a dressing.
4. Add chicken thighs to remaining marinade and let it marinate for two hours.
5. Add a teaspoon of olive oil to a nonstick pan. Sear chicken on each side until 6. Golden, crispy, and cooked through. Set aside and allow to rest.
7. Put lettuce in a large bowl, add tomatoes, red onions, avocado slices, and hard-boiled egg.
8. Slice chicken into strips and place in the salad.
9. Add the remaining marinade to the salad and toss.
10. Sprinkle bacon on top.
11. Enjoy!

Pump Up the Pumpkin—Why They’re Super

Pumpkins’ bright orange color may make them a good substitute for traffic cones, but the real power behind their hue is beta-carotene, a provitamin that is converted to vitamin A in the body. Known for its immune-boosting powers, beta-carotene is essential for eye health and has also been linked to preventing coronary heart disease . But there’s no need to choose fresh to get the benefits of pumpkin.One cup of canned pumpkin has seven grams of fiber and three grams of protein— even more than the fresh stuff— and contains only 80 calories and one gram of fat. Plus, canned pumpkin is packed with vitamins and provides over 50 percent of the daily value of vitamin K, which may reduce the risk for some types of cancer . Still, the real treasure is in the seeds. One ounce (about 140 seeds) is packed with protein, magnesium, potassium, and zinc. Studies suggest pumpkin seeds provide a number of health benefits— such as blocking the enlargement of the prostate gland, lowering the risk of bladder stones, and helping to prevent depression . My go-to snack is a fresh fruit trail mix. You have to make it yourself with whatever mixed nuts you want, but replace the dried fruit with fresh grapes, blueberries, and/or cherries to make it lower in carbs and fresher. And I love the zing you get from the fresh fruit combined with the nuts.

One of my favorite healthy snacks as of late is my homemade, no-bake, gluten-free savory curry granola bars! I’ve been really into savory bars lately as a way to mix it up from the usual sweeter options, and these bars come together really quickly and have a great texture and unexpected flavor.

Working out can be a discouraging process sometimes. When you’re not seeing the results you want when you want them, it can be easy to just give up. But remember that it takes time and effort and to be patient. Here are 5 tips for you to read the next time you’re thinking about throwing in the towel.

  1. Your non-scale victories should be celebrated. I’ve found that the things that excite me the most are the little things — like an old pair of jeans fitting, or willingly choosing the healthy option instead of the more convenient one. Progress is progress, whether it’s losing those 30 pounds or feeling like your workout didn’t totally kick your ass that day!
  2. Work out for yourself- no one else. Do not worry about what you look like, or what other people are thinking of you while you work out. Just do you.
  3. Set your own standard for what being “fit” actually means. Fitness comes in a lot of shapes and sizes. Don’t judge yourself by the standards pop culture has set out there for you.
  4. Lower your chances of skipping a workout by getting it out of the way first thing in the morning. That way you won’t be able to talk yourself out of exercising throughout the day.
  5. Not every day will be a success. It’s okay to have a bad day. Just pat yourself on the back for making it to the gym at all. Tomorrow’s a new day.

And most importantly, just have FUN! You’re getting out there and moving and that’s all that matters. Happy working out!
