Its officially 5 days before Christmas. Have you done all of your shopping? Happy Friday! We are one week closer to my favorite holiday of the year. I know you may have read the title and gasped. But you read it right, I for one am not afraid to admit I find turkey kind of laame. Yes you read the title right! Easy? 3 ingredients? Dinner? When you put all of these things in the same sentence, it’s bound to be a recipe for success. So without further or due, here are 2 recipes that I’m sure you will be making TONIGHT.

Chili-Glazed Salmon

Servings: 3

INGREDIENTS
3 4-ounce salmon fillets
½ cup sweet chili sauce
¼ cup chopped scallions

PREPARATION
1. Preheat oven to 400°F/200˚C.
2. In a bowl, mix together the salmon, chili sauce, and the scallions.
3. Place the fillets on a baking tray lined with parchment paper. Spoon any leftover sauce on top of the salmon.
4. Bake for 12-15 minutes, until the salmon is cooked but still tender.
5. Enjoy!

Teriyaki Chicken

Servings: 2-3

INGREDIENTS
2 pounds chicken thighs, sliced into chunks
1 cup soy sauce
½ cup brown sugar

PREPARATION
1. Sear the chicken thighs evenly in a pan, then flip.
2. Add the soy sauce and brown sugar, stirring and bringing to a boil.
3. Stir until the sauce has reduced and evenly glazes the chicken.
4. Serve with rice, if desired!
5. Enjoy!

Chicken is probably my go to protein on most nights. It’s quick, It’s easy, and It’s the first thing I think of when it comes to what I want for dinner. Happy Friday! Get your weekend started early, dinner is on me tonight.

Here’s what you will need:

  • 3 Chicken Breasts
  • 2 Tbsp. Taco Seasoning
  • 2 Tbsp. Vegetable Oil
  • 1 Onion, sliced
  • 4 Cloves Garlic, sliced
  • 3 Bell Peppers, sliced
  • 1 Lime, juiced
  • 8 Tortillas
  • 2 Tbsp. Butter
  • 2 Cups Mexican Cheese Blend

Directions:

1. Slice the chicken breasts into strips, about an inch apart, and coat with taco seasoning. In a large skillet, heat 1 Tbsp. vegetable oil and cook chicken until no longer pink and slightly charred. Remove cooked chicken from the skillet.

2. Heat another Tbsp. oil, add onion and garlic and cook for a couple minutes until it’s slightly translucent. Add the peppers, and cook slightly, then mix in the cooked chicken. Remove from heat and set aside.

3. In a clean pan, melt a bit of butter. Add a tortilla and move it around until it’s buttery. Add cheese, then fajita mixture, then more cheese, then top with another tortilla and pat it down.

4. Flip the quesadilla over and cook the other side until it’s golden. Remove from pan and cut into quarters. Repeat these steps with the remaining tortillas.

*Optional – Serve with sour cream, guacamole, and salsa. Enjoy!

Tuscan chicken Skillet

Serves: 4
Ingredients
  • 2 Tbsp. olive oil, divided
  • 1 lb. chicken breast tenderloins
  • 1 tsp. kosher salt
  • 1 tsp. freshly ground black pepper
  • 1 tsp. oregano
  • ½ tsp. thyme
  • ½ yellow onion, diced
  • 3 cloves garlic, minced
  • 12 oz. mushrooms, sliced
  • ⅔ c. sundried tomatoes, chopped
  • 1 (15 oz) can Cannelini Beans, drained and rinsed
  • 2 (15 oz) cans fire roasted diced tomatoes
  • 1 Tbsp. sugar
  • Salt and pepper, to taste
  • Parsley for garnish

Instructions

  1. Season the chicken with salt and pepper. Heat 1 tablespoon of olive oil in a large sauté pan or cast iron skillet over medium-high heat, then add the chicken and brown for 3 minutes on each side.
  2. Remove chicken and set aside on a plate. Add the remaining tablespoon olive oil to the pan. Add the sliced mushrooms in a single layer and brown, working in batches, a few minutes per side. Remove from the pan and set aside.
  3. Add the onion and sauté for 3 minutes. Add the garlic, and sundried tomatoes. Sauté for 2 minutes. Stir in the diced tomatoes, spices, beans, and sugar.
  4. Transfer the chicken back to the pan and spoon some of the sauce and vegetables over top of the chicken. Cook, covered, on the stove top until the chicken is cooked through and the sauce is bubbling, about ten minutes. Return the mushrooms to the pan. Taste and add salt and pepper as needed. Serve hot, garnished with parsley.
