Happy Monday friends and fellow bloggers. I hope everyone is having a fabulous start to the work week. This weekend I did a little overindulging so I’m going to give my body a much needed break and refuel it with a lot of delicious and nutritious vegetables. So these recipes I am going to share with you contain no meat but can definitely be modified to include meat if you were good and didn’t over do it this weekend like me. These recipes still pack a protein punch so your body will be able to rejuvenate and your stomach will be just as happy!

Not all snacking was created equally. A bag of chips after a workout probably isn’t a good idea say like snacking on peanut butter and apples after a workout. Protein and carbohydrates are essential after a workout to replenish your body and build those muscles. Here are some high powered protein snacks to enjoy after a workout or just in general. The great thing about these snacks is that they will also keep you full and satisfied until your next meal.

Avocados are an excellent source of good fatty-acids you need in your diet, and combined with the high protein of an egg these two ingredients go hand in hand. Baked eggs in avocado are a quick and easy recipe that you can eat any time of the day. Whether it be breakfast or for a quick snack this recipe makes for an EGGcellent treat!


Baked Eggs in Avocado Recipe


2 ripe avocados
4 fresh eggs
1/8 teaspoon pepper
1 tablespoon chopped chives


  1. Preheat the oven to 425 degrees.
  2. Slice the avocados in half, and take out the pit. Scoop out about two tablespoons of flesh from the center of the avocado, just enough so the egg will fit snugly in the center.
  3. Place the avocados in a small baking dish. Do your best to make sure they fit tightly.
  4. Crack an egg into each avocado half. Try your best to crack the yolk in first, then let the egg whites spill in to fill up the rest of the shell.
  5. Place in the oven and bake for 15 to 20 minutes. Cooking time will depend on the size of your eggs and avocados. Just make sure the egg whites have enough time to set.
  6. Remove from oven, then season with pepper, chives, and garnish of your choice. Enjoy!
