It’s Hump Day! Almost to the end of the week. Why not celebrate by trying out today’s superfood of the week

Beets

Now I will be the first to admit, I am not the biggest fan of this dark red vegetable but that doesn’t mean it isn’t packed full of nutrients that our body needs. That dark red-purple color is nature’s way of letting the world know this vegetable is packed with antioxidants. Beets are also excellent sources of fiber, folate, magnesium, and calcium.

Like my mom always said, “if you don’t like it, fry it!” So if you’re like me and need to convince yourself to try it out, try turning this vegetable into a beet chip. Still getting those nutrients with a GREAT taste. Check out the recipe below!

Baked Beet Chips with Salt & Pepper

INGREDIENTS

    • 2 pounds large beets, peeled
    • 2 tablespoons olive oil
    • Sea salt
    • Freshly cracked black pepper

PREPARATION

    1. Preheat oven to 350°. Line several baking sheets with parchment paper.
    2. Using a mandoline, thinly slice beets to a thickness of 1/16″. In a large bowl, toss beet slices with oil to coat evenly.
    3. On prepared baking sheets, in a single layer, arrange as many slices as will fit without crowding. Bake until crisp, 25-30 minutes, rotating pans once halfway through baking. Cool chips and blot with paper towels to remove any excess oil. Repeat, using a cool prepared baking sheet for each batch, until all beet slices are baked.
    4. Toss chips with 1/4 teaspoon salt and pepper to taste.
 Enjoy!

Happy Monday everyone! I hope you all are having a fantastic start to the week. There is just something about October that actually makes me want to get out of bed in the morning. I don’t know if it’s the mornings turning cooler, or the leavings turning orange but there is definitely something in the air during October. Yes you read the title right! Easy? 3 ingredients? Dinner? When you put all of these things in the same sentence, it’s bound to be a recipe for success. So without further or due, here are 2 recipes that I’m sure you will be making TONIGHT.

Chili-Glazed Salmon

Servings: 3

INGREDIENTS
3 4-ounce salmon fillets
½ cup sweet chili sauce
¼ cup chopped scallions

PREPARATION
1. Preheat oven to 400°F/200˚C.
2. In a bowl, mix together the salmon, chili sauce, and the scallions.
3. Place the fillets on a baking tray lined with parchment paper. Spoon any leftover sauce on top of the salmon.
4. Bake for 12-15 minutes, until the salmon is cooked but still tender.
5. Enjoy!

Teriyaki Chicken

Servings: 2-3

INGREDIENTS
2 pounds chicken thighs, sliced into chunks
1 cup soy sauce
½ cup brown sugar

PREPARATION
1. Sear the chicken thighs evenly in a pan, then flip.
2. Add the soy sauce and brown sugar, stirring and bringing to a boil.
3. Stir until the sauce has reduced and evenly glazes the chicken.
4. Serve with rice, if desired!
5. Enjoy!

Fresh Fruit Trail Mix

My go-to snack is a fresh fruit trail mix. You have to make it yourself with whatever mixed nuts you want, but replace the dried fruit with fresh grapes, blueberries, and/or cherries to make it lower in carbs and fresher. And I love the zing you get from the fresh fruit combined with the nuts.

There’s a special place in the hearts of burger fans for a juicy, char-y slab of ground beef topped with even more beef. Working out can be a discouraging process sometimes. When you’re not seeing the results you want when you want them, it can be easy to just give up. But remember that it takes time and effort and to be patient. Here are 5 tips for you to read the next time you’re thinking about throwing in the towel.

  1. Your non-scale victories should be celebrated. I’ve found that the things that excite me the most are the little things — like an old pair of jeans fitting, or willingly choosing the healthy option instead of the more convenient one. Progress is progress, whether it’s losing those 30 pounds or feeling like your workout didn’t totally kick your ass that day!
  2. Work out for yourself- no one else. Do not worry about what you look like, or what other people are thinking of you while you work out. Just do you.
  3. Set your own standard for what being “fit” actually means. Fitness comes in a lot of shapes and sizes. Don’t judge yourself by the standards pop culture has set out there for you.
  4. Lower your chances of skipping a workout by getting it out of the way first thing in the morning. That way you won’t be able to talk yourself out of exercising throughout the day.
  5. Not every day will be a success. It’s okay to have a bad day. Just pat yourself on the back for making it to the gym at all. Tomorrow’s a new day.

And most importantly, just have FUN! You’re getting out there and moving and that’s all that matters. Happy working out!
