Of course it being October and all, I had to include a fall staple as part of your superfood diet.

Pumpkin

halloweenisscaryweb

Sure, pumpkins can seem spooky in their Jack-o-lantern state, but don’t be fooled— they’re actually one of the most nutritious fruits out there. Loaded with antioxidants and disease-fighting vitamins, these gourds aren’t just for carving, making them a bonafide  superfood.

Pump Up the Pumpkin—Why They’re Super

Pumpkins’ bright orange color may make them a good substitute for traffic cones, but the real power behind their hue is beta-carotene, a provitamin that is converted to vitamin A in the body. Known for its immune-boosting powers, beta-carotene is essential for eye health and has also been linked to preventing coronary heart disease . But there’s no need to choose fresh to get the benefits of pumpkin. One cup of canned pumpkin has seven grams of fiber and three grams of protein— even more than the fresh stuff— and contains only 80 calories and one gram of fat. Plus, canned pumpkin is packed with vitamins and provides over 50 percent of the daily value of vitamin K, which may reduce the risk for some types of cancer . Still, the real treasure is in the seeds. One ounce (about 140 seeds) is packed with protein, magnesium, potassium, and zinc. Studies suggest pumpkin seeds provide a number of health benefits— such as blocking the enlargement of the prostate gland, lowering the risk of bladder stones, and helping to prevent depression . Plus, they contain high levels of phytosterols, which research suggests can reduce cholesterol and even help prevent some types of cancers . So get scooping!

It’s Hump Day! Almost to the end of the week. Why not celebrate by trying out today’s superfood of the week

Beets

beets.jpg

Now I will be the first to admit, I am not the biggest fan of this dark red vegetable but that doesn’t mean it isn’t packed full of nutrients that our body needs. That dark red-purple color is nature’s way of letting the world know this vegetable is packed with antioxidants. Beets are also excellent sources of fiber, folate, magnesium, and calcium.

Like my mom always said, “if you don’t like it, fry it!” So if you’re like me and need to convince yourself to try it out, try turning this vegetable into a beet chip. Still getting those nutrients with a GREAT taste. Check out the recipe below!

Baked Beet Chips with Salt & Pepper

51238670_oil-baked-beet-chips_1x1

INGREDIENTS

    • 2 pounds large beets, peeled
    • 2 tablespoons olive oil
    • Sea salt
    • Freshly cracked black pepper

PREPARATION

    1. Preheat oven to 350°. Line several baking sheets with parchment paper.
    2. Using a mandoline, thinly slice beets to a thickness of 1/16″. In a large bowl, toss beet slices with oil to coat evenly.
    3. On prepared baking sheets, in a single layer, arrange as many slices as will fit without crowding. Bake until crisp, 25-30 minutes, rotating pans once halfway through baking. Cool chips and blot with paper towels to remove any excess oil. Repeat, using a cool prepared baking sheet for each batch, until all beet slices are baked.
    4. Toss chips with 1/4 teaspoon salt and pepper to taste.
 Enjoy!

We all give into cravings when we’re hungry and grab the first thing off the shelf. In order to not give into temptation, next time make some of these healthy snacks in big batches to keep on hand.

Spiced Popcorn 3 Ways

popcorn

Popcorn is a satisfying and nutritious snack that can be whipped up in a matter of minutes. For this recipe, you can either go with a curry paprika, garlic parm, or spicy oregano spice blend.

http://www.foodheavenmadeeasy.com/spiced-popcorn-3-ways/

Fresh Fruit Trail Mix

trail-mix

My go-to snack is a fresh fruit trail mix. You have to make it yourself with whatever mixed nuts you want, but replace the dried fruit with fresh grapes, blueberries, and/or cherries to make it lower in carbs and fresher. And I love the zing you get from the fresh fruit combined with the nuts.

Curry Granola Bars

granola

One of my favorite healthy snacks as of late is my homemade, no-bake, gluten-free savory curry granola bars! I’ve been really into savory bars lately as a way to mix it up from the usual sweeter options, and these bars come together really quickly and have a great texture and unexpected flavor.

http://www.fannetasticfood.com/2015/11/06/savory-curry-granola-bar-recipe-no-bake/

Chocolate Coconut Oat Bars

oat

These chocolate coconut oat balls are one of my favorite snacks. They are no-bake and easy to roll together using ingredients from the pantry. I love that they are portion controlled and easy to take with me on the go!

http://www.katheats.com/chocolate-coconut-oat-balls

BBQ-Flavored Roasted Chickpeas

chickpeas

Once I figured out how to make a spice blend that perfectly mimicked the flavor of BBQ chips — but is completely healthy — I knew these would be my favorite snack. They’re filled with fiber and protein to fill you up, and they’re so easy that even my takeout-loving friends can make them. I make a big batch on Monday and snack on ‘em throughout the week.

Now you don’t need to feel bad about snacking!
