Happy Friday Followers! February may be the shortest month out of the year, but that doesn’t mean there is a shortage of delicious food and recipes to match. So here’s a look at what’s in season this month and what you should be cooking!
It’s National Backwards Day. So I thought a fun way to celebrate would be to eat your dessert before dinner. I mean let’s face it, some of us tend to do that anyway. Here is a recipe for one of my go to desserts on any given day. Super easy to make and tastes just as delicious. Enjoy!
3 cups dark chocolate chips, divided
1/2 cup natural peanut butter
3 tablespoons coconut oil, divided
15-20 large pretzel rounds (I used the 2″ish diameter ones, as opposed to the 1″ tiny ones)
DIRECTIONS:
In a microwave-safe bowl, combine 1 1/2 cups chocolate chips with 1 tablespoon coconut oil. Heat in the microwave in 20 second increments, stirring frequently, until melted. Dunk pretzels into the melted chocolate and allow excess chocolate to drip off (is there such a thing as excess chocolate? not sure.). Place chocolate covered pretzels on a piece of wax paper that is on top of a baking sheet (i didn’t have wax paper so I used a piece of foil rubbed down with coconut oil). Place pretzels in the freezer for 10 minutes, or until hardened.
Now, place your peanut butter and 1 tablespoon coconut oil in a microwave-safe bowl. Heat until thinned. Dunk chocolate covered pretzels into the peanut butter mixture and place back on the wax paper. Return to the freezer for 10 minutes.
Finally, melt the remaining 1 1/2 cups chocolate chips with 1 tablespoon coconut oil. Dip frozen chocolate-pb pretzels into the chocolate and place on a clean sheet of wax paper. Place in the freezer until hard. I like to store my pretzels in the freezer and grab them as craved.

On this cold rainy Wednesday, I want nothing more to be at home snuggled in bed with a huge bowl of clam chowder. That says comfort to me. We all have our own versions of comfort food but what if we can have our comfort and be healthy too? Here’s a look at some of our favorite comfort foods that are beneficial to our health as well.
Happy Friday the 13th! Even if you aren’t superstitious or afraid of the number 13, you may be slightly freaked out by some of these foods on this list. After you’re done reading this post, comment below if you’ve ever tried any of these food or plan to in the future!
Squid Ink Pasta
I don’t have a problem with this lovely pasta dyed with squid ink, but some find eating black pasta to be just a bit too freaky.
Scrapple
Quite a few have been quick to add scrapple to the freaky food list. Based on the definition, I can see why it makes the list. What’s not a little frightening about a loaf of savory mush from cornmeal, flour, and pork scraps?
Sweetbreads
Many people simply can’t wrap their heads around the fact that they’re eating the thymus gland of a baby cow.
Chicken Feet
Chicken feet are a delicacy that are usually served in Chinese dim sum; they’re often deep-fried, then boiled and marinated in a black bean sauce. There are, however, a ton of little bones. It’s gross to look at and, quite frankly, just doesn’t have enough payoff.
Blood Sausage
Anything with the word “blood” in it deserves to be on the freaky list. Black pudding — which actually has very little to do with pudding and a lot to do with blood — is a sausage made by cooking animal blood with a filler until it is thick enough to congeal.

By now eating healthy is seen as a lifestyle change and not a diet. Regardless, it can still be tougher for others to stay on the healthy eating train. Remember a tiger can’t change it’s spots overnight and the same goes for your eating habits. It’s going to take time to incorporate some of these tips into your daily diet and it’s okay if you fall off the wagon a time or two. As long as you get back on and to a more healthier you.
Cook with oils like olive oil and avocado oil because they’re not as processed as some other oils, like canola.
Try poaching and braising your food instead of frying.
Stock up on frozen veggies and add them to everything.
stock up on frozen lean proteins, like shrimp and chicken.
Stock your kitchen with whole, minimally processed foods that are versatile so that you can use them in a lot of different recipes without getting bored.
Keep complex carbs like sweet potatoes, quinoa, and brown rice on hand.
Bookmark a bunch of healthy one-pan or one-pot recipes that you really enjoy.

BRRRR… Happy Friday everyone. If you’re in Austin, TX today then you’re probably freezing your butt off like I am. I can’t wait to go home after this long work day and snuggle up by the fire. The only thing that would make that better is if I had some hot dinner to go along with it. Here are 3 slow cooker recipes sure to warm the soul and your hands this cold and chilly weekend.
Slow Cooker Pot Roast
INGREDIENTS 3 pounds chuck roast
Salt, to taste
Pepper, to taste
1 ounce dried onion soup mix
1 onion, diced
3 gold potatoes, diced
3 large carrots, chopped
½ cup water
PREPARATION
1. Place the chuck roast in a 7-quart slow cooker.
2. Sprinkle on salt, pepper, and onion soup pack. Top with vegetables and water.
3. Cook on low for 8 hours, or high for 4-5 hours.
4. Enjoy!
Slow Cooker Chicken & Biscuits
INGREDIENTS
3 chicken breasts, diced
Salt, to taste
Pepper, to taste
2 cups broccoli florets
2 cups baby carrots, diced
21.5 ounces condensed cream of chicken soup
1 can refrigerated biscuits
PREPARATION 1. Place the chicken in a 7-quart slow cooker. Sprinkle on salt and pepper.
2. Add the veggies and condensed soup and mix thoroughly.
3. Cook on high for 3 hours.
4. Rip biscuit dough into small pieces and drop evenly over chicken. Cook an additional hour.
5. Enjoy!
Slow Cooker Cornbread Chili
INGREDIENTS 2 pounds pork shoulder, diced
1 tablespoon seasoned salt
1 tablespoon cumin
1 can kidney beans, drained
½ cup tomato, diced
½ onion, diced
½ cup red enchilada sauce
1 box cornbread mix, prepared according to instructions
Cheddar cheese to top, optional
PREPARATION 1. Place the pork shoulder, seasoned salt, cumin, kidney beans, tomato, onion, and enchilada sauce in a 7-quart slow cooker. Mix thoroughly.
2. Cook on high for 3 hours.
3. Dollop prepared cornbread evenly over mixture. Cook an additional hour.
4. Top with cheddar cheese if desired.
5. Enjoy!
Go start that crock pot and crank up the fire. It’s going to be a warm and cozy weekend with these recipes in your hand.
