Everyone loves to snack. When you’re bored, relaxing at home, or just plain hungry and you don’t quite want a full meal. I’ve been searching high and low for more nutritious snacks to munch on in between meals and some that I thought were good for me, turned out not to be! So I wanted to share these snacks with you so you will no longer be fooled and give you alternative snack ideas to these options.

Pre-Flavored Instant Oatmeal

Packets of flavored, instant-cooking oatmeal tend to be high in sugar and made from oats that are highly processed to ensure a faster cooking time — meaning they’ll be lower in fiber and provide less satiety, and ultimately not keep you that full for long.

Healthy swap: Opt for steel-cut or rolled oats made without added flavoring, sugar, or preservatives. Both options are less processed — as they aren’t designed to cook instantly — are digested at a lower rate, and will keep you fuller longer. To add a bit of flavor, add nut butter or fresh fruit.

Flavored Yogurt

Yogurt can be a great snack — high in protein, super portable, and a great vehicle for fruit, nuts, or whatever you like to top it with — but flavored yogurt is often quite high in added sugar, especially the low- and fat-free varieties which rely on lots of added sugar so they still taste good even with the fat removed.

Healthy swap: Stick with plain Greek yogurt and add your own fruit to the mix. It’ll have more protein, be a lot more satiating, and keep your blood sugar more stable (which goes hand-in-hand with maintaining steady energy levels and enough willpower to make better eating decisions!).

Granola Bars

The idea of granola is great — whole grains mixed with some fruit for flavor and nuts for healthy fats and protein. But prepackaged granola tends to be high on the flavor and low on the nutrition. Plus it’s pretty calorically dense, meaning lots of calories in a relatively small serving.

Healthy swap: Look for, or make, bars low in added sugar and additives, like Larabars, which contain nine ingredients or less and come without preservatives or artificial ingredients.

Microwave Popcorn

Store-bought popcorn options can be excessively high in sodium, with each bag containing more than your suggested allowance of 2,300 milligrams per day.

Healthy swap: Pop your own popcorn by placing a quarter cup of popcorn kernels in a paper bag, and microwaving. Add a little butter, salt, pepper, maybe coconut oil… whatever!

Fat-Free or Reduced-Fat Snacks

Most fat-free or reduced-fat snacks — be it chocolate pudding, peanut butter, or cookies — have an extra helping of sugar, salt, or both, to make sure the food tastes as good without the missing ingredient.

Healthy swap: Healthy fats in moderation help you maintain a feeling of fullness, provide our bodies with stores of energy, and can improve cholesterol levels, so don’t rule these out. Instead, choose good fats like a handful of walnuts, or a tablespoon of natural peanut butter with a banana. And if you’re watching your caloric intake, stick to a smaller serving size.

Happy Monday everyone! And what a happy Monday it is, because who doesn’t like pie. What better way to start off the week than with National Cherry Pie Day. Here are some facts you may not have known about this pie that doesn’t get nearly as much recognition.

  1. The word ‘cherry’ comes from the Turkish town of Cerasus.
  2. Cherries belong to the rose family.
  3. Canada holds the record for baking the biggest cherry pie in the world. A pie weighing 39,683 pounds was baked in Oliver, British Columbia which broke the record that was earlier held by Traverse City         mitrapie01_0957
  4. Once upon a time, serving ice cream on cherry pie in Kansas was prohibited.
  5. Cherry pie is the fifth popular pie in the US – beaten only by Apple, Pumpkin, Pecan and Banana Cream.

 

Of course I couldn’t leave you without a recipe, so here is a tried and true recipe for cherry pie. Enjoy!

Cherry Pie

Ingredients

  • 4 cups fresh or frozen tart cherries
  • 1 to 1 1/2 cups granulated sugar
  • 4 tablespoons cornstarch
  • 1/8 tablespoon almond extract (optional)
  • Your favorite pie crust or pie dough recipe for 2 crust pie
  • 1 1/2 tablespoons butter, to dot
  • 1 tablespoon granulated sugar, to sprinkle

Directions

Place cherries in medium saucepan and place over heat. Cover. After the cherries lose considerable juice, which may take a few minutes, remove from heat. In a small bowl, mix the sugar and cornstarch together. Pour this mixture into the hot cherries and mix well. Add the almond extract, if desired, and mix. Return the mixture to the stove and cook over low heat until thickened, stirring frequently. Remove from the heat and let cool. If the filling is too thick, add a little water, too thin, add a little more cornstarch.

Preheat the oven to 375 degrees F.

Use your favorite pie dough recipe. Prepare your crust. Divide in half. Roll out each piece large enough to fit into an 8 to 9-inch pan. Pour cooled cherry mixture into the crust. Dot with butter. Moisten edge of bottom crust. Place top crust on and flute the edge of the pie. Make a slit in the middle of the crust for steam to escape. Sprinkle with sugar.

Bake for about 50 minutes. Remove from the oven and place on a rack to cool.

Happy Friday! There’s something about this particular Friday that has me in high spirits today. I cannot wait to get out of work to go home and relax and begin my weekend. I don’t necessarily have the drive and motivation to cook dinner on Friday’s but when I do, I always opt for something light because I know I’m going to make some not so good decisions during the weekend. So here is a quick, easy, and light salad recipe you can make for dinner tonight that will be sure to set the mood for the upcoming weekend.

Honey Mustard Chicken, Bacon, and Avocado Salad

INGREDIENTS

Servings: 4

Dressing/Marinade
2 tablespoons olive oil
⅓ cup honey
3 tablespoons stone ground mustard
2 tablespoons Dijon mustard
½ lemon
1 teaspoon minced garlic
½ teaspoon salt
½ teaspoon pepper
4 skinless and boneless chicken thighs

Salad
1 head romaine lettuce, chopped
1 cup cherry tomatoes, halved
¼ red onion, thinly sliced
1 avocado, diced
1 hard-boiled egg, sliced
¼ cup cooked bacon, diced

PREPARATION

1. In a small bowl, add the olive oil, honey, stone ground mustard, Dijon mustard, 2. Lemon, garlic, salt, and pepper. Whisk until smooth.
3. Remove ½ of the marinade and refrigerate to use as a dressing.
4. Add chicken thighs to remaining marinade and let it marinate for two hours.
5. Add a teaspoon of olive oil to a nonstick pan. Sear chicken on each side until 6. Golden, crispy, and cooked through. Set aside and allow to rest.
7. Put lettuce in a large bowl, add tomatoes, red onions, avocado slices, and hard-boiled egg.
8. Slice chicken into strips and place in the salad.
9. Add the remaining marinade to the salad and toss.
10. Sprinkle bacon on top.
11. Enjoy!

It’s National Backwards Day. So I thought a fun way to celebrate would be to eat your dessert before dinner. I mean let’s face it, some of us tend to do that anyway. Here is a recipe for one of my go to desserts on any given day. Super easy to make and tastes just as delicious. Enjoy!

Triple Dipped Peanut Butter Chocolate Covered Pretzels

INGREDIENTS:

3 cups dark chocolate chips, divided
1/2 cup natural peanut butter
3 tablespoons coconut oil, divided
15-20 large pretzel rounds (I used the 2″ish diameter ones, as opposed to the 1″ tiny ones)

DIRECTIONS:

In a microwave-safe bowl, combine 1 1/2 cups chocolate chips with 1 tablespoon coconut oil.  Heat in the microwave in 20 second increments, stirring frequently, until melted.  Dunk pretzels into the melted chocolate and allow excess chocolate to drip off (is there such a thing as excess chocolate? not sure.).  Place chocolate covered pretzels on a piece of wax paper that is on top of a baking sheet (i didn’t have wax paper so I used a piece of foil rubbed down with coconut oil).  Place pretzels in the freezer for 10 minutes, or until hardened.

Now, place your peanut butter and 1 tablespoon coconut oil in a microwave-safe bowl.  Heat until thinned.  Dunk chocolate covered pretzels into the peanut butter mixture and place back on the wax paper.  Return to the freezer for 10 minutes.

Finally, melt the remaining 1 1/2 cups chocolate chips with 1 tablespoon coconut oil.  Dip frozen chocolate-pb pretzels into the chocolate and place on a clean sheet of wax paper.  Place in the freezer until hard.  I like to store my pretzels in the freezer and grab them as craved.
