Happy National Donut Day everyone!! If you haven’t already, stop by a Krispy Kreme near you to receive one free glazed donut. Dunkin Donuts is also offering one free donut with the purchase of any beverage. Since we’re honoring the beloved donut on this day, I had to share with you all one of my favorite easy donut recipes.

Chocolate Peanut Butter Cup Donuts

2

These are for the chocolate peanut butter lovers out there! I mean what better combination to put on a donut?

1

What makes this donut recipe so easy is that they are made with Pillsbury Grand Homestyle Buttermilk Biscuits. Homemade dough is great but for those of you who need a time saver like I do, these make a great substitution and they taste fantastic!

3

These donuts are dark and decadent and incredibly delicious while also gourmet. I mean who would have thought you could make donuts like these in your own kitchen? These are sure to be a crowd pleaser with everyone!

4

Ingredients
  • 1 (8ct) Pillsbury Grands Homestyle Buttermilk Biscuits (not flakey layers)
  • oil, for frying
  • 3oz (1/2 cup) semi-sweet chocolate chips
  • 2oz (1/4 cup) heavy cream
  • ¼ cup creamy peanut butter
  • 35 mini peanut butter cups, cut in half
Instructions
  1. Fill a large stock pot or dutch oven with oil 2 to 3 inches high from the bottom. Heat oil on medium heat.
  2. Open the can of biscuits and separate each one. Flatten each biscuit slightly with your hand and cut out the centers with a small biscuit cutter.
  3. Once the oil is hot, fry donuts 3 or 4 at a time until golden brown on each side, using a wooden skewer or metal spatula to turn them over. Remove the donuts and place them on a paper towel lined baking sheet, until they are slightly cooled down. Repeat with remaining dough.
  4. Heat heavy cream in the microwave for 30 seconds or until it simmers, but watch it to make sure it doesn’t spill over. Pour hot cream over chocolate chips and stir until smooth.
  5. Dip the top half of the donut in the ganache and then set it on a cooling rack that has been placed inside a baking sheet to dry. (The baking sheet catches any drips.)
  6. Add the halved peanut butter cups after the ganache has mostly cooled down; if it’s too hot still, it will melt the peanut butter cups.
  7. Heat the peanut butter in the microwave for 15 seconds or until slightly melty, but not runny. Scoop the warm peanut butter into a zip top bag, seal it shut, then cut off the corner, and while squeezing, zig-zag the peanut butter over each donut. Enjoy! Store any extra donuts in a container with a lid for a day or two.

The greatest compliment I can receive is a review from a satisfied client. It was a joy to work with this family and I am so happy I was able to help them build their dream home! I wish them luck and much happiness in the future.

Review:

“Great Job Mrs. Kathy. I just closed on a house my wife and i had built from the ground up. It was very grueling process and she was there ever step of the way. She helped us find a location pick the type of house and even went with us to the design center to help pick out everything. She was very helpful especially since it was our first rodeo. I recommend her if your looking for a professional real estate agent with many years of experience. My wife and I love our new home and we are thankful for her in helping us into our dream home.”

Happy Memorial Weekend Everyone!! I hope everyone has a fantastic weekend celebrating with friends and family. I wanted to take a moment to remember all of those brave men and women who valiantly fought for our freedom and for those who continue to do so today. Without them it would not be possible for us to lead the lives that we do. They’re courage and commitment to our country is what makes them truly heroes. Thank you to all in the armed services who so selfishly give up their lives so we can live ours!

Have a wonderful holiday everyone!

I recently received a picture from a friend of mine of an old man riding around Austin on a bike wearing nothing but his underwear! It was a funny sight to see to say the least and it got me thinking about Austin’s slogan “Keep Austin Weird”. Austin is known for preserving its quirkiness and the people that live here are very proud of the culture; some even embody it. One thing I especially love about Austin is the food! There’s so many “weird” and unique places to eat here and I wanted to share some of them here that you should definitely try! They may sound a little weird but we wouldn’t be doing our Austinite duty if we didn’t do our part in keeping Austin weird! Check out these unique dishes when you get the chance, you won’t be disappointed!

Good Afternoon Friends and Family!! It’s almost Friday hooray!

I thought I would share with you all today a fun and healthy recipe that I came across. It’s a unique twist on one of my favorite side dishes, mashed potatoes. It has the same great look and taste of mashed potatoes but with a healthy twist, you substitute potatoes for cauliflower. It’s an excellent way to fool your children into trying new vegetables and it tastes great too!

Cauliflower Mashed “Potatoes”

INGREDIENTS:

1 head of cauliflower
3 tablespoons milk
1 tablespoon butter
2 tablespoons light sour cream
1/4 teaspoon garlic salt
freshly ground black pepper
snipped chives

DIRECTIONS:

1. Separate the cauliflower into florets and chop the core finely.

2. Bring about 1 cup of water to a simmer in a pot, then add the cauliflower. Cover and turn the heat to medium. Cook the cauliflower for 12-15 minutes or until very tender.

3. Drain and discard all of the water (the drier the cauliflower is, the better) and add the milk, butter, sour cream, salt and pepper and mash with a masher until it looks like “mashed potatoes.” Top with chives.

Despite the Cold and Wet weather for a Friday, I hope you all Enjoy the day!!
Have a Wonderful Weekend Friends!!

Happy Friday

I know We all fall victim to not spending enough time with Family or Friends. So, here I’ve gathered a Few tips to Help You, and Myself with getting better with Time!

The modern age may demand your attention through handheld devices and smartphones, but your family needs your attention from, well, You. Don’t let your phone compete for family time and instead, exercise these simple, practical and very human tips to reconnect:

Turn off your phone. Compartmentalize your life to focus your attention on what you’re doing and enjoying at that moment. If it’s work time, then enjoy working. If it’s family time, then enjoy the family!

Eat dinner together. Dinnertime is a perfect way to share your successes with each other, regroup or just catch up. Make sure to ask kids specific questions about their day. And keep the TV off.

Read with your kids. Reading not only helps you connect with your kids, but also helps build their vocabulary, increase their curiosity about life, and gets them interested in reading. They will cherish it forever.

Attend kids’ concerts and games. Kids want to see your face in the crowd. You can share their wins and help them understand their losses. These shared experiences make for great conversations over many family dinners to come.

Exercise together. Shooting some hoops, taking a walk, or just throwing or kicking a ball together while you small talk will be great for your family relationships.

Do the morning or afternoon school run. This gives you a chance to encourage your kids to have a great day, ask them how their day went, and show how proud you are of them.

Don’t forget date night! Kids are important, but so is your partner. Going out for a special night at least once a week—just the two of you—is important for reconnecting. It also shows your kids how important you are to each other.
