It’s officially summer which means brushing off those grills (if you haven’t already in central Texas) and having a summer get together. If you are vegetarian this recipe is amazing or if you have some vegetarian guests coming to your home for a cookout make sure you provide plenty of options for them. This recipe will be perfect for your summer cookout!

Ingredients

  • 1/4 cup olive oil
  • 2 small Japanese eggplants or 1 medium to large regular eggplant, cut crosswise into 1/2-inch-thick slices
  • 2 zucchini, cut crosswise into 1/2-inch-thick slices
  • 1 small red onion, cut into 1/2-inch-thick slices
  • Salt and freshly ground black pepper
  • 2 baguettes (each about 2 feet long)
  • 1/2 cup Basil Pesto, recipe follows
  • 8 ounces fresh water-packed mozzarella cheese, drained, sliced
  • 2 tomatoes, sliced
  • 1/2 cup roasted red peppers
  • 8 large basil leaves, optional

Directions

Heat a grill pan over medium-high heat. Drizzle the oil over the eggplant, zucchini, and onion slices, then sprinkle with salt and pepper. Working in batches, grill the eggplant, zucchini, and onions until they are tender and grill marks appear, about 4 minutes per side. Cool completely.

 

Cut each baguette into 6 pieces. Working with one baguette piece at a time, slice in half and spread both sides with the pesto. Working with the bottom slice of the baguette, stack 2 slices of eggplant, 2 slices zucchini, 1 slice onion, 1 slice tomato, 1 slice mozzarella, and 1 slice of roasted pepper. Sprinkle with salt and pepper. Place top half of baguette on top and continue with remaining baguette. (The sandwiches can be made 4 hours ahead. Wrap well with plastic wrap and refrigerate.)

 

Yield: 12 servings

Total Time: 30 minutes

Basil Pesto:

2 cups fresh basil leaves

1/4 cup toasted pine nuts

2 garlic cloves, peeled

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1/3 cup (about) extra-virgin olive oil

1/2 cup grated Parmesan

 

In a blender, pulse the basil, pine nuts, garlic, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper until finely chopped. With the blender still running, gradually add enough oil to form a smooth and thick consistency. Transfer the pesto to a medium bowl and stir in 1/2 cup of cheese. Season the pesto with more salt and pepper, to taste. (The pesto can be made 2 days ahead. Cover and refrigerate.)

 

Yield: 1 cup

I have stumbled across another fitness goldmine and thought I would have to share! This chart by EverybodyWalk.org shares the AMAZING benefits of simply walking! If you are unable to set aside time everyday to go to the gym or go for a run just remember that walking is also beneficial.

 

Here are some everyday tips that you can add to your typical day to walk more throughout your day.

Tip 1: If you usually ride the elevator at work then choose to take the stairs instead. It’s a simple way to walk more while not taking away an hour of your day.

 

Tip 2: If there is a restaurant nearby on your lunch break then you could also choose to walk there rather than drive. This also benefits your wallet because you will be saving gas as well!

 

Tip 3: When you are out and about shopping or running errands park in the farthest parking space to add more walking distance to and from the store.

 

Don’t forget tomorrow is Mother’s Day which means celebrating the women who mean the most to us. If you want to take your mother somewhere fun this year look no further. The Austin Symphonic Band is giving a FREE show at the Capital grounds for the public at 7 pm. This is definitely something to check out with your family!

10th Annual Adult Spelling Bee

I have always been a big supporter of education and literacy programs in Austin. When I heard about this event I thought ‘what a cool competition’ and just had to share!
So you think you’re smarter than a 5th grader? Here’s your chance to prove it at the 10th Annual Adult Spelling Bee tomorrow night at Threadgills. The best part is that the proceeds benefit the Austin Public Library.
